Because KOLD wouldn't scan right in the song? :-)
Not to mention that, since it (sort of) spells a word of its own, it would
take away from the "OLD", which was part of the point of the song.

As to the (oft repeated) guesses that W and K stand for something or other,
they don't.  They were assigned to the US in an international treaty way
back when.  (I can never remember the year, but it had to have been before
1920.)
