You should definetely try WavePad

It's free, and it is very very simple. The only
problem with this is that it records to a "wav" file
temporarily. So an hour's worth of audio is
uncompressed and can be approx 600mb or so. You can
use the software to compress to mp3 after you've
stopped recording though.
