My guess is you'd hear both channels simultaneously.  Just like listening 
to an FM stereo broadcast on a mono radio.  Or a stereo cassette on a mono 
tape machine.

However, DON'T play your stereo records with a mono pickup. You'll ruin 
the disk!!!!  :)
